A stone or a steel is bought for one property — thermal mass — and thickness is how it is measured. A thin stone gives back its heat to the first pizza and has none for the second; a thick one takes longer to come up and holds. That trade is the whole family, and both figures are published. The second question is fit: a stone is bought by its dimensions against the internal width of the oven and its shelf, not against the oven's liter figure, and mini ovens make this decisive. How long should a stone be preheated?

Can a stone crack?

How do I clean a stone?

Dry, with a brush or scraper, never with soap, which it absorbs. Dark stains are normal and harmless.

Can I use baking paper on a stone?

Why does my tray warp in the oven?

A thin tray expands unevenly and bangs. A thicker tray does not move; it is the main difference between ranges.

Steel or stone for pizza?

Steel transmits faster and gives a crisper base; stone is lighter and more forgiving. Both work far better than a thin tray.

Can the stone stay in the oven?

Many people leave it: it stabilizes the oven temperature for all baking. It does lengthen the preheating time.

Does a stone replace a pizza oven?

It gives a cooked, crisp base in a domestic oven, which a tray does not. It does not reach the temperature of a wood oven, and the bake stays longer.
