Vacuum bags come embossed or smooth, and most external sealers require embossed — a channel-free smooth bag simply will not draw down. The second figure is thickness in microns, which decides whether a bag survives a bone or a long bath. We compare construction, thickness, the sizes and roll widths available, the sealer types each is declared compatible with, and the temperature range the manufacturer publishes for the material. A bag meant for storage does not always take eighty degrees for six hours. The stated temperature ranges say which ones go from freezer to water bath.

Nothing is free: the trade-offs of vacuum bags & rolls

Embossed against smooth bags: External-suction machines demand embossed bags, which cost more; chamber machines accept smooth bags. The type of machine decides, not preference.
Roll against pre-cut pouches: The roll is cut to the length wanted and costs less; pouches are ready-made and waste film on small items.
Jars against bags: Jars are reusable indefinitely and suit dry and fragile products. They do not freeze as easily.

Do all bags fit all machines?

No. External-suction machines demand embossed bags; smooth bags will not evacuate in them.

Can I cook in a vacuum bag?

Only if it is declared suitable for cooking. Not all storage bags withstand long immersion in hot water.

Can a bag be reused?

For dry products and after thorough washing, possibly. After raw meat or fish, never.

Why does the vacuum not hold?

A seal made across a damp or greasy area does not hold. Wipe the top of the bag before sealing, or fold the edge over before filling.

How long does a vacuum-packed product keep?

Markedly longer than in air, without that dispensing with refrigeration. Vacuum slows oxidation, it does not sterilize.

Can liquids be vacuum-packed?

With difficulty: suction draws them up. Freeze them first, or use a jar.

Are vacuum jars worth it?

For dry goods, coffee and fragile foods, they are reusable indefinitely and avoid the consumable.

Is a roll cheaper than ready-made bags?

Per decimetre, yes, and it lets you make the exact length. It does need a machine that seals, and two seals per bag instead of one.
