The plus side, and the minus

Strengths

  • A published hole diameter, which none of the other eleven items sold on Amazon.com gives
  • Four named ovens it is designed for, and a statement that it works in others
  • Under a pound — 14.4 oz — so it lifts out of a countertop oven easily

Compromises

  • Four bullets, the thinnest page on this shelf
  • No temperature limit, no chemistry, no dishwasher statement
  • Twenty dollars for one 13-inch pan, where two cost sixteen here

What the maker puts in writing

  • “Breville’s 13 Inch Non-Stick Pizza Crisper Pan features 1/3 inch crisper holes for supreme, golden-brown results; Enjoy crispy, precisely booked pizzas from your home kitchen”
  • “EASY CLEANUP: Avoid endless scrubbing; Pizza crisper’s non-stick surface leaves you more time for the fun part”
  • “PART OF A COMPLETE SMART KITCHEN: Pizza crisper designed for use with Breville Smart Oven (BOV800XL) Smart Oven Plus (BOV810BSS) Smart Oven Pro (BOV845BSS), and Smart Oven Air (BOV900BSS)”
  • “While Breville pizza crisper is designed to be a Smart Oven accessory, it can also be used with traditional household wall ovens”
  • From the name: “13 Inch, Black”
  • Reference BOV800PC13 · Catalog: 14.4 oz (408 g), 13 × 13 × 0.98 in (330 × 330 × 25 mm)

A third of an inch, which is the only hole size on this shelf

“features 1/3 inch crisper holes for supreme, golden-brown results”

None of the eleven other items sold on Amazon.com publishes a hole diameter.

What the holes are doing. A pizza base releases water as steam while it bakes. On a solid tray that steam has nowhere to go: it sits between the dough and the metal and the base steams rather than browns.

Holes let it out, and they let oven air touch the underside directly.

The trade is contact. Metal conducts heat into dough far better than air does, so a hole is a place where the base gets less heat. Too much hole area browns in a pattern; too little steams.

Which makes the diameter and the spacing the whole design — and why the rest of this shelf tells you nothing:

BAKKENMASTER pizza pan, $15.99 — “strategically placed holes” Emporio Kitchen, $15.43 — “The perforated base design promotes even airflow” GoodCook, $18.99 — “a perforated edge” GoodCook set, $25.19 — “Air-insulated and perforated” NutriChef set, $36.99 — “a perforated baking sheet” among six pieces

A third of an inch is about 8.5 mm across — large enough to vent freely, and small enough that a soft dough does not sag through it.

And one item on this shelf takes a different route entirely. The Bakken-Swiss at $12.59 is a removable basket above a tray, so air circulates all round the food rather than through holes beneath it — right for chips and bacon, wrong for a pizza base, which wants contact.

While the three stones solve the same problem a third way: absorption. The Unicook at $33.99: “The porous surface of the pizza cooking stone effectively absorbs excess moisture from pizza dough, creating a crispy, golden pizza crust.”

Vent it, suspend it, or soak it up. This is the only page that tells you how big the vents are.

Four named ovens, and the only compatibility list here

“designed for use with Breville Smart Oven (BOV800XL), Smart Oven Plus (BOV810BSS), Smart Oven Pro (BOV845BSS), and Smart Oven Air (BOV900BSS)” · “it can also be used with traditional household wall ovens”

It is the only item on this shelf with a model list at all, and the only one that then tells you the list is not a restriction.

Why it matters on a countertop oven rather than a wall oven.

A full-size oven shelf is about 22 inches wide and takes almost anything. A countertop oven cavity is a box with inches of margin — and a pan a quarter-inch too wide does not go in, while a pan an inch too narrow wastes the only space you have.

So a pan sold for four named cavities is sized to those cavities, and that is the whole value of the list.

The catalog confirms the size: 13.0 × 13.0 × 1.0 inches (330 × 330 × 25 mm).

Which puts it level with the two cheapest pizza pans on this shelf:

Emporio Kitchen, $15.43 — 13 inch, though its catalog reads 15 in (380 mm) because of the silicone handle BAKKENMASTER pizza pan, $15.99 — 13 × 13 × 0.78 in, published and confirmed by its catalog this — 13 × 13 × 1.0 in

And the larger pans here would not fit a countertop oven at all. Both GoodCook pans are 15.75 inches — 15.7 and 16.5 inches (400 and 419 mm) by catalog — and the Emile Henry stone at $109.95 catalogs at 18 × 14 inches (457 × 356 mm).

At 14.4 oz (408 g) this is the lightest item on this shelf.

11 oz (311 g) per pan in the BAKKENMASTER pair · this 14.4 oz (408 g) · 1.2 lb (543 g) per Emporio Kitchen pan · 1.4 lb (624 g) per pan in the GoodCook set · 1.5 lb (680 g) for the Bakken-Swiss and the GoodCook 16-inch · 3.4 lb (1.54 kg) for the NutriChef six-piece set And the stones: 6.5 lb, 7.3 lb and 7.5 lb (2.95, 3.31 and 3.4 kg)

In a countertop oven that lightness is a real advantage. The cavity is shallow, it is hot on all four sides, and you are reaching in with a mitt — so a pan you can lift with two fingers is the right pan, and a 7.5-pound stone is not going in a Smart Oven at all.

Four bullets, and what the rest of the shelf publishes

It is the thinnest page here, and two of its four bullets are about which oven it suits.

No temperature limit. Four items on this shelf publish one, and it is the same figure every time: 450 °F (230 °C) — the Emporio Kitchen at $15.43, the BAKKENMASTER pizza pan at $15.99, the Moss & Stone set at $23.99, the NutriChef set at $36.99. Five publish nothing, this included.

Why 450 °F is the number to notice. A commercial pizza oven runs 700 to 900 °F. Most home pizza recipes call for 475 to 550 °F — the top of a domestic oven — because a crust needs enough bottom heat to set the base before the top overcooks. So a coated steel pan rated to 450 °F is rated below what the recipe asks for.

And the rating protects the coating rather than the steel: a non-stick film degrades above its rated range, and carbon steel does not care at these temperatures. Treat 450 °F as the ceiling here too.

The three stones are in another world. Unicook at $33.99: cordierite, “heat-resistant up to 1,450°F (787°C)”. Ritual Life at $36.95: “up to 1500°F (815°C)”. Emile Henry at $109.95: “up to 900 degrees F” on gas, charcoal and wood grills, and “Can be used in all types of ovens and under the broiler”. A thousand degrees of difference, because a stone has no coating to lose.

No coating chemistry. Five items here publish theirs: PFOA, PFOS and PTFE free on the Bakken-Swiss at $12.59, the Emporio Kitchen at $15.43 and the BAKKENMASTER pizza pan at $15.99 · PFOA, PFOS, PTFE and BPA free on the NutriChef set at $36.99 · “PFOA-Free” alone on the BAKKENMASTER 18-piece set at $57.99. And one states its coating is PTFE: the Moss & Stone 5-piece set at $23.99, “Carbon Steel Non-Stick PTFE Coating”.

This page says “non-stick surface” and stops, as do both GoodCook pans.

No material at all. It does not say what the pan is made of — where every other steel item here names carbon steel, and the Emporio Kitchen at $15.43 gives the thickness too: “0.5mm thick carbon steel”, the only figure on this shelf. For scale, heavy-gauge bakeware runs 0.8 to 1.0 mm.

No dishwasher statement. “Avoid endless scrubbing” is the whole cleaning claim, where seven items on this shelf claim dishwasher safety outright.

And the caveat worth importing from the stones. A dishwasher cycle is hot, alkaline and abrasive, and a coating is what it wears over hundreds of cycles. Two of the three stones forbid soap entirely — the Unicook at $33.99 (“Do not use detergent”) and the Ritual Life at $36.95 (“no soap needed”), because a porous stone absorbs it — while the Emile Henry at $109.95 is “Dishwasher safe or hand wash with soap and water.”

No handles and no feet. Both GoodCook pans publish feet: “the bottom of the round oven pan also has feet to keep the hot pan elevated and off the countertop, preventing heat damage.” Two steel items publish silicone handles: the Emporio Kitchen at $15.43 (“a wide, oversized handle wrapped in silicone… no mitt fumbles”) and the BAKKENMASTER 18-piece set at $57.99.

On a countertop oven, feet matter more than usual: the pan comes out onto a countertop that is already next to a hot appliance.

No cutting guides, which only the two GoodCook pans have.

No warranty. Two items on this shelf publish one: the Emile Henry at $109.95 — a 10 year Guarantee whose terms are stated — and the Moss & Stone set at $23.99 (“1-year warranty”). The Ritual Life at $36.95 offers support rather than a term. Nine publish nothing.

No country of manufacture, which no item on this shelf publishes.

Twenty dollars for one pan, on a shelf where two cost sixteen

It is the most expensive single metal pizza pan here — only the three stones cost more, and the comparison is worth making plainly.

BAKKENMASTER pizza pan, $15.99 — two 13-inch perforated pans, $8.00 each, dimensions published to the hundredth of an inch, 450 °F, PFOA/PFOS/PTFE free, dishwasher safe Emporio Kitchen, $15.43 — two 13-inch perforated pans, $7.72 each, with silicone handles, 0.5 mm steel, 450 °F, PFOA/PFOS/PTFE free, dishwasher and oven safe this, $19.95 — one 13-inch perforated pan, with a published hole size and a named oven list GoodCook, $18.99 — one 15.75-inch pan, with feet and cutting guides GoodCook set, $25.19 — two 15.75-inch pans, $12.60 each, with feet and cutting guides

So on specifications published, the two cheaper two-packs give you more pans and more numbers.

What this pan gives that none of them can. A pan sized to a named cavity. Which is worth real money if you own a Smart Oven and nothing if you do not — and bullet four is honest enough to tell you so.

And the hole size is the other thing. It is the only page on this shelf that tells you what the perforation actually is, which on a pan whose whole function is perforation is the specification rather than a detail.

What readers want to know

Why is a published hole size worth anything?

Because it is the specification of a crisper, and none of the eleven other items sold on Amazon.com gives it. Bullet one: "Breville’s 13 Inch Non-Stick Pizza Crisper Pan features 1/3 inch crisper holes for supreme, golden-brown results." What the holes are doing. Which is why the diameter and the spacing are the whole design — and why "strategically placed holes" (the BAKKENMASTER pizza pan at $15.99) and "perforated base design" (the Emporio Kitchen at $15.43) and "a perforated edge" (the GoodCook at $18.99) tell you nothing. A third of an inch is about 8.5 mm (0.33 in), which is large enough to vent freely and small enough that a soft dough does not sag through it. Six items on this shelf are perforated: this, the Emporio Kitchen at $15.43, the BAKKENMASTER pizza pan at $15.99, both GoodCook pans at $18.99 and $25.19, and the perforated sheet in the NutriChef set at $36.99. One suspends the food instead: the Bakken-Swiss at $12.59, a removable basket above a tray, which is right for chips and bacon and wrong for a pizza base. And the three stones solve it by absorption: the Unicook at $33.99 — "The porous surface... effectively absorbs excess moisture from pizza dough." Vent it, suspend it, or soak it up. This is the only page that tells you how big the vents are.

Do I need a Breville oven to use it?

No, and the page says so in its own fourth bullet — but the sizing is the reason to care. Bullet three: "Pizza crisper designed for use with Breville Smart Oven (BOV800XL), Smart Oven Plus (BOV810BSS), Smart Oven Pro (BOV845BSS), and Smart Oven Air (BOV900BSS)." Bullet four: "While Breville pizza crisper is designed to be a Smart Oven accessory, it can also be used with traditional household wall ovens." It is the only item on this shelf with a model compatibility list at all. Why it matters on a countertop oven rather than a wall oven. A full-size oven shelf is about 22 inches wide and takes almost anything. A countertop oven cavity is a box with inches of margin — and a pan that is a quarter-inch too wide does not go in, while a pan an inch too narrow wastes the only space you have. So a pan sold for four named cavities is sized to those cavities, and that is the whole value of the list. The catalog confirms the size: 330 × 330 × 25 mm (13 × 13 × 0.98 in) — 13.0 × 13.0 × 1.0 inches. Which puts it level with the two cheapest pizza pans here: the Emporio Kitchen at $15.43 (13 inch, though its catalog reads 380 mm (15 in) because of the handle) and the BAKKENMASTER pizza pan at $15.99 (13 × 13 × 0.78 in, published and confirmed). And at 408 grams it is the lightest item on this shelf — against 311 g (11 oz) per pan in the BAKKENMASTER pair, 543 g (19.2 oz) per Emporio pan, 680 g (24 oz) for the GoodCook 16-inch, and 2950 to 3402 grams for the three stones. In a countertop oven that lightness matters: the shelf is shallow, the cavity is hot on all four sides, and you are reaching in with a mitt — so a pan you can lift with two fingers is the right pan.

Four bullets — what is missing?

Six things the rest of this shelf publishes, and none of them changes how it bakes. And the three stones are in another world: 1,450 °F on the Unicook at $33.99, 1500 °F on the Ritual Life at $36.95, 900 °F on a grill and under the broiler on the Emile Henry at $109.95. No coating chemistry. Five items here publish theirs — four of them "PFOA, PFOS and PTFE free" — and one states its coating is PTFE: the Moss & Stone set at $23.99, "Carbon Steel Non-Stick PTFE Coating". This page says "non-stick surface" and stops, as do both GoodCook pans. No material. It does not say what the pan is made of — where every other steel item here says carbon steel and the Emporio Kitchen at $15.43 gives the thickness as well: "0.5mm (0.02 in) thick carbon steel", the only figure on this shelf. No dishwasher statement. "Avoid endless scrubbing" is the whole cleaning claim, where seven items here claim dishwasher safety outright. No handles and no feet. Both GoodCook pans publish feet — "to keep the hot pan elevated and off the countertop, preventing heat damage" — and two steel items publish silicone handles. On a countertop oven, feet matter more than usual: the pan comes out onto a countertop that is already next to a hot appliance. And no warranty, where the Emile Henry at $109.95 publishes ten years with its terms and the Moss & Stone set at $23.99 publishes one.
