Wet batter, loose leafy greens, plain rice and pasta, soups, a large turkey and anything that must be cooked deep. Cheese melts through the basket, and popcorn kernels fly into the element. Most limits come from the shape of the machine, not its settings.
Nine foods that do not work well
| Food | Why | Instead |
|---|---|---|
| Wet batter (beer batter, tempura) | Drips off before it sets | Dry breading, sprayed with oil |
| Loose leafy greens (spinach, lettuce) | Blown around, scorched | Sauté, or kale chips at a low setting |
| Plain rice, dry pasta | Needs water to cook | Stovetop, or a multi-cooker |
| Soups, stews, sauces | Liquid, spills | Pot or multi-cooker |
| Loose cheese | Melts through the holes | Bread it, or use a dish |
| Popcorn | Kernels fly into the element | Stovetop or microwave |
| A whole turkey or large roast | Does not fit with air around it | Oven |
| Big batches | Steam instead of crisp | Cook in batches |
| Light, loose items on their own | Lifted by the fan | Weigh down or skip |
Three real limits behind the list
No oil to set a coating. Batter needs hot oil; air alone lets it run.
One layer. Food that has to be cooked deep — a pot of chili, a big batch of fries — steams instead of crisping. See why a single layer matters.
A fan above the food. Anything light lifts and reaches the element: greens, empty parchment, popcorn. See can you put parchment paper in an air fryer.
What surprises people by working well
Hard-boiled eggs, reheated pizza, roast vegetables, small cakes in a pan and frozen food straight from the freezer — see can I cook eggs in an air fryer, can you reheat food in an air fryer and is an air fryer good for vegetables.
The appliance for what an air fryer cannot do
A multi-cooker for rice, soups and stews — the Instant Pot Rio Mini at $90.99 or the COMFEE’ at $73.79. A toaster oven for a whole pizza, toast or a sheet-pan dinner — the BLACK+DECKER 5-in-1 air fries too.
Check your own manual before you follow anything here. Temperatures, fill limits and pressure ratings differ from model to model, and the manufacturer’s figures take precedence over anything written on this site. We report what makers publish — an oven’s range in degrees, a cooker’s maximum fill line, whether a part is declared dishwasher-safe — and we never turn those figures into food-safety guidance. Cooking temperatures and holding times for particular foods are set by manufacturers and by your national food safety authority, and this site points you to them rather than restating them.

What readers want to know
Why does wet batter fail in an air fryer?
Because there is no oil to set it. In a deep fryer, batter meets hot oil and firms instantly; in moving air it drips off the food and through the basket before it sets. Use a dry breading instead — flour, egg, then breadcrumbs or panko — and spray it lightly with oil.
Can I cook popcorn in an air fryer?
Most manufacturers advise against it. Kernels need about 400 °F and fly around when they pop; light kernels can be blown into the heating element, and many will not pop at all. A pot on the stove or a microwave bag works better.
Can I cook a whole chicken in an air fryer?
A small one, if it fits with an inch of air around it — usually about 3 to 4 lb in a large basket. A whole turkey does not fit, and a bird that touches the element burns on top before the inside reaches 165 °F.
