Why a single layer matters in an air fryer

An air fryer moves hot air past food. Food that is not in the path of that air is not being air fried — it is steaming.

Quarts are the wrong unit

A stated capacity measures the drawer to its rim, including the air above the food. What decides whether four portions cook evenly is the flat area food can occupy in one layer, and that is a different figure — sometimes published, usually not. See stated against usable capacity.

What actually happens in a full basket

The bottom layer sits in its own moisture. The top layer crisps. Shaking or turning halfway helps, which is why most air fryer recipes say “shake the basket” at the midpoint — it moves the bottom layer into the air for a few minutes. It does not turn a stacked basket into a single layer.

Three ways to get more in

A rack, if the basket is square and the machine is large enough — stackable racks let two layers cook with air between them rather than on top of each other. Measure the basket floor first, because drawers taper.

A flat tray with air under it. In an oven or an air-fry toaster oven, a basket that sits above a tray does the same job: the Bakken-Swiss basket and tray at $12.59 lets air circulate all round the food, which is right for fries and bacon.

Two zones, if you are cooking two different things. Two independent drawers finishing together is a different capability from one big drawer of the same total size.

The rule

If it does not have air around it, it is not being air fried. Everything else on this page follows from that — and so does the first habit in setting up a first air fryer.

What readers want to know

How do I know my basket's flat area?

Measure the floor, not the top opening — drawers taper. Almost no maker publishes it. The few that help publish what fits instead, which amounts to the same thing: a load in food, such as "17.6 oz of fries" or "six drumsticks", tells you more than a quart count does.

Is a second drawer better than a bigger one?

For two different foods, yes — two zones can run at different settings and finish together. For one large item, a single big drawer holds more than either half of a dual-zone machine: a whole chicken does not fit in half a basket.

Is an air-fry toaster oven better for a single layer?

Often, yes. A toaster oven's tray is flat and wide, so food spreads into one layer by itself; a drawer basket is deep and narrow, and invites stacking. The BLACK+DECKER 5-in-1 and the Hamilton Beach air-fry toaster ovens on this site both take a 9-inch pizza on their tray.
