Can I bake bread in a mini oven?

Yes, if the loaf pan fits — with height to spare for the rise — and the timer runs long enough. Inside height and a 60-minute timer matter more than wattage.

The limit is the pan, and the rise

Bread wants 350 to 450 °F, which most toaster ovens reach. What stops people is the cavity: a 9 × 5 loaf pan is about 2¾ inches deep, and the bread rises well above the rim. A loaf that touches the top elements burns on top before the middle is baked.

Two toaster ovens on this site publish the inside of the cavity, which is the only way to check before buying:

Elite Gourmet French-door, $84.99 — 13.25 × 13.5 × 8.95 in: a 9 × 5 pan and its rise fit Breville Mini Smart Oven, $159.95 — 11 × 10 × 4 in: the pan fits, a risen loaf does not

The rest publish a slice count and a pizza size, which tells you the width and nothing about the height.

The second limit: the timer

A loaf takes 30 to 45 minutes, and a 30-minute timer stops before it does. The BLACK+DECKER toaster oven has a 30-minute timer with a stay-on setting — use stay-on and a kitchen timer. The Elite Gourmet has a 60-minute timer, long enough for any sandwich loaf.

The third limit: steadiness

A small oven swings in temperature more than a big one, and its dial is a guide rather than a measurement. Put an oven thermometer where the pan sits and check it before trusting the setting — or check the loaf itself: about 190 to 210 °F in the center when it is done.

What helps

An 8 × 4 pan instead of a 9 × 5 — the GoodCook pair is $11.99 — which gives a taller oven more clearance. A lower rack position, so the loaf sits away from the top element. Foil over the top once the crust has its color.

What does not

Wattage. An 1,800 W oven that will not take your pan and its rise is not more useful than a 1,500 W one that will.

Before buying for bread

Measure your pan, add two inches for the rise, and look only at ovens that publish an inside height you can compare it to. See also measure before you buy.

What readers want to know

What temperature do toaster ovens reach?

Most reach 450 °F, which is enough for bread: a sandwich loaf bakes at about 350 to 375 °F, a crusty loaf at 425 to 450 °F. On this site the Elite Gourmet French-door oven publishes 200 to 450 °F, and the BLACK+DECKER toaster oven bakes to 450 °F.

Will a 9 × 5 loaf pan fit?

Check the inside width and, above all, the inside height. A 9 × 5 pan is about 2¾ inches deep, and the loaf rises an inch or two above it. The Elite Gourmet publishes a cavity of 13.25 × 13.5 × 8.95 inches — room for the pan and the rise. The Breville Mini Smart Oven publishes 11 × 10 × 4 inches: the pan fits, but a risen loaf would touch the top elements. An 8 × 4 pan is the safer size in a small oven.
