Stated capacity against usable capacity

Every jar, pot, bowl and basket in this category is sold on a number measured to its rim — and used at a level well below it.

Why the gap exists

A blender jar cannot be filled to its rim or the lid will not seat and the contents climb out. A pressure cooker has a maximum fill line for safety. An air fryer basket needs air above the food. A food processor leaks round its shaft. In each case the stated figure includes space you cannot use.

The makers who close it, in food

Philips: not a usable volume but something better — what fits. The NA229 gives 17.6 oz (500 g) of fries, six drumsticks or 17.6 oz of vegetables in a 4.4-quart basket.

KitchenAid: the 5-quart bowl of the Artisan is rated at 9 dozen cookies, which is a dough load rather than a rim figure.

Instant Pot: the 4-quart pot is sold “for up to 4 servings” — a serving count, not a volume, but closer to what you will actually cook.

The fill lines that cut a third

On a pressure cooker the usable volume is two-thirds of the stated one, and half for beans and grains. A 6-quart pot cooks about 4 quarts of stew; an 8-quart, about 5.3. That is the figure to compare against your household, not the number on the box.

On a food processor the rule is the blade for liquids and two-thirds for dry, which is why a 10-cup processor is a 6- or 7-cup machine for most jobs.

How to plan when nobody publishes it

Assume two thirds to three quarters of the stated figure for anything with a lid, and check the manual for anything under pressure. That is a planning assumption, not a measurement, and we would rather say so than dress it up.

The one place not to estimate

Maximum fill on a pressure cooker. That line is molded inside the pot, it is a limit rather than a guideline, and the manual that came with your machine gives the half-full rule for foods that foam.

What readers want to know

Who publishes a working figure?

Very few, and they do it in food rather than in quarts. Philips gives its NA229 air fryer — a 220-volt European model — a load — 17.6 oz (500 g) of fries, six drumsticks — in a 4.2-liter (4.4-quart) basket. KitchenAid rates the 5-quart bowl of the Artisan at 9 dozen cookies. Everyone else publishes the rim figure alone.

How full can a pressure cooker be?

Two-thirds full at most, and half full for food that foams or swells — beans, rice, grains and stock with a lot of starch. That is the standard limit in pressure cooker manuals, and the maximum fill line molded inside the pot is the one to follow. So the 4-quart Instant Pot cooks about 2.7 quarts of stew, and 2 quarts of beans. It is a hard limit, not a preference: overfilling can block the steam release.

How full can a food processor be?

To the top of the blade for anything liquid, and about two-thirds for anything dry. A 10-cup bowl like the Hamilton Beach 70730 at $69.95 therefore takes far less soup than ten cups: liquid escapes round the central shaft long before the bowl is full.
