Not by the timer. A toothpick from the center comes out clean or with a few crumbs, the top springs back when pressed, and the middle reads 200 to 210 °F. In a toaster oven, the top usually browns before the middle is done.
The four tests
1. The toothpick. Push it into the center and pull it out: clean or a few moist crumbs means done; wet batter means more time.
2. The spring-back. Press the center lightly. It springs back when done and leaves a dent when not.
3. The edges. A done cake pulls away slightly from the sides of the pan.
4. The thermometer, the only test that does not rely on judgment:
| Cake | Done at the center |
|---|---|
| Butter cakes, sponge, cupcakes | 200–210 °F |
| Quick breads (banana, zucchini) | about 200 °F |
| Brownies (fudgy) | about 185 °F |
| Cheesecake | about 150 °F, then cools to set |
Why a toaster oven complicates it
The top element is close. The surface browns early and can look done while the middle is still liquid.
The dial is a guide. A small cavity swings above and below the setting, more than a full-size oven — an oven thermometer on the rack tells you the truth. See preheating and what it is for.
The pan matters more. A dark pan browns the outside faster; a glass pan bakes slower.
How to fix a cake that browns too fast
- Lower rack position, away from the top element.
- 25 °F lower than the recipe.
- Foil laid loosely over the top once it has its color.
- A smaller pan — an 8-inch round rather than a 9 — so the middle catches up.

What readers want to know
What internal temperature means a cake is done?
About 200 to 210 °F in the center for most butter and sponge cakes, about 200 °F for quick breads such as banana bread, and about 150 °F for a cheesecake, which sets as it cools. An instant-read thermometer settles it in seconds — the ThermoMonster HT09 at $16.99 reads in about half a second.
Why is my cake brown on top but raw in the middle?
Because the top element in a toaster oven is close to the cake. Use a lower rack position, lower the temperature by about 25 °F, and lay foil loosely over the top once it has the color you want. A smaller or shallower pan also helps the middle catch up.
Why not trust the timer?
Because it measures time, not the cake — and a small oven often runs hotter or cooler than its dial says. Start checking about two-thirds of the way through the recipe time, and use the tests below to decide.
