Do silicone baking pans need a tray underneath?

Yes, in practice — a filled silicone pan bends wherever you hold it. Set it on a sheet pan before you fill it, and carry the sheet. It also slows browning on the bottom, which is often welcome.

The handling reason

A silicone pan has almost no rigidity of its own. Full of batter, it bends wherever it is held, and batter goes over the side. The sheet pan is how it goes into the oven and comes out again in one piece — fill it in place, and carry the sheet.

The baking effect, which is real

A sheet between the silicone and the bottom element shields the base. In a toaster oven, where the element is close, that is usually an improvement rather than a compromise — the same problem as a cake browning on top before the middle cooks, from the other side.

What silicone gives you in exchange

Release, often without greasing — see do I need to grease a silicone baking pan. Flexibility, so a bake comes out by peeling the pan away. Storage, because it folds.

What it does not give you

A crisp, browned base, which needs conducted heat from metal. Support — hence the sheet.

The metal comparison

A steel pan conducts, browns and holds its shape, and it is what most recipes assume when they say “a pan”. It needs greasing or lining. On this site: the Amazon Basics 6-piece set at $31.99, which includes a 13 × 9 sheet; the GoodCook 13 × 9 bake and roast pan at $9.99; and the Moss & Stone 5-piece set at $23.99. See the baking tins and molds page.

The toaster oven constraint

Whatever the material, it has to fit with air all round — about an inch at the sides. Use the bake pan the oven came with as the tray, and measure before buying silicone for a small oven; see measure before you buy. In an air fryer, the same rule applies — see can I put a silicone mold in an air fryer.

What readers want to know

Does a sheet pan under a silicone pan change the baking?

A little — it shields the base from direct bottom heat, which slows browning underneath. In a toaster oven, where the bottom element is close, that is often an improvement. Add a few minutes if the recipe was written for a metal pan, and check with a toothpick.

Can I put a silicone pan directly on the oven rack?

You can, but fill it first and do not move it once full. The wires of a rack let a soft pan sag between them, and lifting a full pan off a rack by one edge is how batter ends up on the oven floor. A sheet pan avoids both.

What kind of tray works best?

A flat, rimmed sheet pan — the rim catches overflow, and flat metal spreads heat evenly under the silicone. A 13 × 9 sheet fits most full-size ovens; in a toaster oven, use the bake pan it came with.
