Does blending warm the food up?

Yes — friction from the blade warms food: a little in 30 seconds, a lot in five minutes. That is what thins a long-blended smoothie, and what high-power blenders use on purpose to heat soup.

Where the heat comes from

Friction, between the contents and the blade and the jar walls. The faster the blade and the thicker the load, the more of the motor’s energy ends up as heat in the food.

The motor, which sits directly under the jar and warms the base on a long run.

How much

Not much over a normal run. A smoothie blended for 30 to 60 seconds gains only a few degrees. Over three to five minutes of a thick load at full speed, it is very noticeable — which is exactly how some high-power blenders make hot soup with no stove.

Where it matters

Frozen drinks and smoothies, where a few degrees is the difference between thick and thin. Nut butters, where heat releases the oil — see can I grind nuts into flour in a blender. Pie dough and pastry in a food processor, where warm butter makes it tough.

Where it does not

Soup, sauces and batters, especially anything already warm or going into a pan.

How to keep it cold

  • Frozen fruit straight from the freezer, and cold liquid.
  • Short bursts, stopping as soon as it is smooth.
  • Liquid first, then soft, then frozen, so the blade catches quickly and runs less.
  • Ice cubes in place of some of the liquid for a thicker drink.

What increases it

Long continuous runs, which also heat the motor — and most makers publish no duty cycle, so bursts with a check between them are the habit. A thick load that circulates badly, so the blade works the same contents again and again.

The stick blender case

Held in the hand, the warming shows on the machine rather than in the food. A stick blender whose motor body gets hot needs a rest — see the immersion blenders page and the countertop blenders page.

What readers want to know

Why does my smoothie get warm and thin in the blender?

Friction from the spinning blade turns into heat, and a long run melts frozen fruit and ice. Blend in shorter bursts, start with frozen fruit straight from the freezer, use less liquid, and stop as soon as it is smooth — usually within a minute. See can I blend frozen fruit in any blender.

Can a blender heat soup on its own?

Some high-power blenders can, running at full speed for several minutes until friction brings cold ingredients to steaming — and their makers sell it as a feature. An ordinary blender cannot run that long safely, and its jar may not be rated for hot contents. See how to blend hot soup safely.

Does blending destroy nutrients by heating them?

Not in a normal run. A minute of blending raises the temperature only a few degrees, far below cooking temperatures. Oxygen whipped into the drink affects some vitamins over hours more than heat does — so drink it fresh, or keep it cold and covered.
